Naked layered cake




If you are not the best pastry chef like me and think the less ingredients go into a cake the less can go wrong, you have to try this really simple and easy 'naked layered cake' recipe.
Searching through the internet for inspirations, especially on pinterest, as you do, I stumbled over the simplest I have ever seen. And still it kind of went wrong and instead of a 4 layered cake it happened to be only a two layered cake. Unfortunately the cake dough didn't rise enough to cut it through so I ended up only using the two cakes...
Anyways if it might not work for you as well, you can just mix a second dough mixture.

My sister celebrated her birthday, hooray! - So here the recipe for this special occasion:

For the dough you will need:

  • 200g icing sugar
  • 6 eggs
  • 200g flour
  • 1 pkg baking powder (=16g)
...and for the cream:
  • 750g cottage cheese (quark)
  • 50g sugar
  • juice of 1 lemon
  • 1 pkg grounded gelatin (=9g)
Decoration
  • non toxic flowers, berries, herbs, etc.
Preheat the oven to 170° celsius and start off by beating the eggs with the sugar for a couple of minutes until a kind of fluffy mixture develops. Now add the flour and the baking powder and keep on mixing. Pour your dough into the pre-greased cake tins and put it into the oven. I have used two cake tins with a diameter of 23cm. (Best would be a diameter of 20cm) Cook for about 30min.
Finally onto the creme... Mix up the cottage cheese, the sugar and the lemon juice. Besides mix the grounded gelatin with 6 table spoons of cold water. And finally mix everything together.

And now onto the final part which I call cake stapling. Halve your cakes and simply put a cake then the creme on top, then the cake half again and so on. On the very top put some more creme and decorate with any berries you fancy or you can also use non toxic flowers, or herbs, let your imagination soar...
